2 Amigos Mexican Omelet

 

 

 

Filling

1 sweet banana pepper, chopped finely

¼ of a white onion, chopped finely

coarsely ground pepper

cilantro

celery seed

ground Cayenne red pepper

1 Tbsp. margarine

3 Tbsp. Salsa (click here for recipe)

Shredded Colby Jack Cheese

In small frying pan, combine pepper, onion, and margarine.  Begin to brown.  Sprinkle generously with ground pepper and cilantro.  Sprinkle a pinch each of celery seed and Cayenne pepper as desired to taste (I used 3 pinches Cayenne and it was perfect for me…)  After mixture is thoroughly browned add Salsa to frying pan and mix for 1 minute.  Set aside.  When ready, add to center of omelet with generous helping of shredded cheese.

 

Omelet

2 eggs

milk

salt

pepper

cilantro

Prepare omelet as outlined in Ham and Cheese Omelet Recipe, turn off fire, add filling while in skillet, remove to plate, top, and serve.

 

Topping

Shredded Colby Jack Cheese

Sliced onion, browned in butter until soft

Salsa, to taste (click here for recipe)
