1 pkg. Pillsbury Crescent dinner rolls
1 lb. bulk sausage (I use J. C. Potter)
2 cups grated potatoes (blotted to remove excess juice)
8 oz. pkg. Colby/Jack cheese, grated
5 eggs, beaten
¼ cup milk
½ tsp. salt
dash of pepper
Press crescent rolls into the bottom of a pizza pan sprayed with Pam to form crust. (I use a deep dish baking stone.)
Brown sausage, drain, and blot with paper towels to remove all excess grease. Sprinkle sausage, grated potatoes and grated cheese onto crust.
Beat eggs and add milk, salt, and pepper. Pour over.
Bake at 375 for 25-30 minutes. Let it sit for about 5 minutes to solidify.
(Sometimes potatoes that are very juicy will cause the pizza to appear not to be
fully cooked. I try to blot the potatoes with multiple paper towels to avoid
this problem.)
