Clean and thinly slice the new potatoes into a square dish (I use a 9x9 glass dish). Sprinkle with salt and pepper, mix well. Cover with wax paper and cook in the microwave on high for approx. 5 minutes. Stir. Check the tenderness of the potatoes. If necessary, heat for another minute. Dollop butter randomly on potatoes, cook for 2 more minutes. Sprinkle thoroughly with cheese, sprinkle with cilantro, cover, and replace in microwave. When ready to serve, sprinkle with chopped green onions. Enjoy!
