Fresh Veggie Salad

 

 

 

1 Head leaf lettuce

1 Carrot

2 Green onions (as desired)

8 Broccoli crowns (as desired)

½ Green (or red) Bell pepper (as desired)

1 Boiled egg, finely chopped

Croutons or bacon bits

Preferred Dressing

 

The best thing about this salad is that you make it how you want it!  I prefer as many fresh veggies as I can add, but if you want, leaf lettuce is great with just carrot and dressing.  Make sure all veggies are thoroughly cleaned before you put them in your salad.  For a more healthy salad, try without dressing or “lite” dressing.  Remember to evenly mix your veggies throughout the salad, leaving enough lettuce and veggies to make a top layer that hides the rest of the mixed salad.  You can make it as fancy or as plain as you like, but keep in mind also that if you have any left over, the egg will only be good a couple of days and your croutons or bacon bits should be added once served to prevent sogginess from the refrigerator.
