Fruit Omelet with Berry Sauce

 

Filling:

1 apple, sliced thinly length-wise

1 banana, sliced thinly into round disks

3 large pinches brown sugar

2 dustings cinnamon

1 Tblsp margarine

 Place margarine, brown sugar, and cinnamon in frying pan, place apple slices and banana disks on top.  Cook.  Stir constantly, flipping and rotating so all the mixture cooks down well.  Remove from heat (place in small bowl) and cover.

 

 

 

Sauce:

1 c blackberries

2 tsp cornstarch

1 c water

¼ c (or about that) sugar

 Mix in pan on stove, bring to a hard boil, reduce heat and simmer while making omelet.  Bring to hard boil again just before placing on omelet.

 

Omelet:

2 eggs

Milk

Sprinkle of salt

Sprinkle of cinnamon

 Mix eggs, a bit of milk, salt and cinnamon in small bowl, then pour into frying pan. (you can use the same one used to fry the apple and banana, just wipe it out in-between)  Follow omelet instructions for Ham and Cheese Omelet for cooking-how-tos on omelet preparations.  When the omelet is done, and while still in the skillet, add fruit to one side of the omelet and fold over.  Remove from skillet and add berry sauce.

 Serves 2.
