Ham and Cheese Omelet

 

 

 

3 eggs

Milk

Salt

Pepper

Cilantro Leaves

Margarine

Ham chunks (small pieces – amount as desired)

2 green onions (chopped)
Grated cheese (I prefer Colby Jack)

 

In a small skillet, put small bits of margarine to brown ham chunks and green onion.  Set aside.  In small mixing bowl, whisk eggs, a little milk, salt, pepper, and some cilantro.  Pour into skillet and wait, checking occasionally to see if the edges are liftable.  When the top of the eggs looks like it won’t run too much, use spatula (I use two – one on both sides of the skillet) to flip omelet.  The second side will finish quickly, so get ready to move quickly!  Flip omelet one last time, add ham, onions, and some cheese, fold in half.  Remove to plate.  (Once again, I use two spatulas)  Sprinkle more grated cheese and cilantro on top for looks.  Serves 2 (or 1 hungry person!)
