Heat oven to 350°. Grease bottom and sides of rectangular pan, 13x9x2 inches, 2 round pans, 9x1 ½ inches, or 3 round pans, 8x1 ½ inches with margarine or shortening; lightly flour.
CAKE
2 ¼ c flour
1 ½ c sugar
½ c creamy peanut butter
1 ¼ c milk
3 ½ tsp baking powder
1 tsp salt
1 tsp vanilla
3 large eggs
Mix all ingredients, beat with electric mixer on high 3 minutes. Pour 2/3 of the batter (about 3 cups) into the pan(s). Stir 2 Tbsp. baking cocoa and 1/8 tsp baking soda into remaining batter. Drop chocolate batter by generous tablespoonfuls randomly in mounds onto peanut butter batter. Pull knife through batters in S-shaped curves in one continuous motion for marbled design. Turn pan ¼ turn; repeat marbling.
Bake rectangle 40-45 minutes, 9-inch rounds 30-35 minutes, 8-inch rounds 20-25 minutes, or until toothpick inserted in center comes out clean or until cake springs back when lightly touched in center. Cool rectangle pan on wire rack. Cool rounds 10 minutes; remove from pans to wire rack. Cool completely.
FROSTING
Fudge Frosting (darker chocolate swirls)
¼ c granulated sugar
2 Tbsp baking cocoa
2 Tbsp milk
1 Tbsp stick margarine or butter (I used margarine)
½ Tbsp light corn syrup
Pinch of Salt
½ c powdered sugar
¼ tsp vanilla
Mix granulated sugar and cocoa in 2-quart saucepan. Stir in milk, margarine, corn syrup and salt. Heat to boiling, stirring frequently. Boil 3 minutes, stirring occasionally; cool.
Stir in powdered sugar and vanilla until smooth.
Peanut Butter
Buttercream Frosting (lighter base)
3 c powdered sugar
1/3 c peanut butter
2 tsp vanilla
½ c semi-sweet baking chocolates, melted and cooled
¼ c milk
Mix all ingredients except milk in medium bowl. Stir in milk until smooth and spreadable. Add more milk if necessary by tablespoonfuls.
HOW TO MAKE MARBLE FROSTING
Frost the cake with the Peanut Butter Buttercream Frosting. Then, as with the cake, drop the fudge frosting on by tablespoonfuls and swirl gently with a knife, careful not to cut into the cake.
Serve with ice cream, or a tall glass of milk! Enjoy!
